Apricot Sponge Cake


This is as a very special cake coz my little daughter helped me to bake it.She did all the beating, mixing and was super happy with the cake.


Ingredients


  • 2 cups self rising flour
  • 1 cup sugar
  • 2 eggs
  • 3 Tbsp butter
  • 1 cup milk
  • 2 tbsp apricot preserve/jam
Method

  1. Pre heat oven to 350F
  2. beat the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition.
  4. Add in the apricot preserve and milk ,mix well.
  5. Gently fold into the self rising flour
  6. Bake for about 35 mins or till an inserted tooth pick comes out clean.
  7. Cut into 2 halves,spread glaze on the bottom layer.
  8. Place the other half on top .
  9. Decorate with apricot glaze or powdered sugar.
Apricot Glaze

Mix apricot preserve and water and melt in a pan.
We put a dollop of apricot preserve on each slice.
