Soto Ayam


Soto ayam is a delightful,light Indonesian chicken soup.It has amazing combination of flavors.....with the corriander,lime,cumin etc its almost like a party in your mouth.This again is easy and a high protein soup,great for people on SBD.I made this for lunch yesterday and was very filling.



Soto ayam

Ingredients

2 tbsp Cumin seeds
2 tbsp Corriander seeds
3 cloves Garlic
2 tbsp Lime juice
1/2 onion
2 green chillies
1/4 tsp turmeric powder
salt
1/2 cup Boneless Chicken pieces
1 cupChicken stock
1/2 cup coconut milk
5 tbsp Lettuce
1 tbsp bean sprouts
1 tbsp fried onion and garlic
spring onions
handful Vermicelli or rice noodles
1 boiled egg


Method

  1. Make a paste with the cumin,corriander,lime,turmeric,salt,onion, garlic and the green chillies.
  2. Fry the paste till it is fragrant or slightly browned
  3. Add in the chicken stock and cooked chicken pieces and let it boil well,add in the coconut milk.
  4. Put in the vermicelli and let it cook.
  5. When its almost done put in the lettuce and the bean sprouts.
  6. Transfer to a bowl ,garnish with fried onions and garlic,spring onions and the egg slices.
