Papdi Chat


Dont we all love the Gaadi Panipuri and the Masala Puri?????I for sure do.

When in India my cousins and I would also go this local place and we'd call it kolle (dirty) panipuri coz the place was small,dingy and we thought it looked dirty but what the hell we'd go anywhere for some good pani puri/chaat.



Today my friends K ,small S and myself got together to make papdi chat.(missed you big S) .....first we argued that the papdi was to be made with rice flour finally we decided to use wheat flour.We then started the never ending process of rolling out the dough,cutting it and frying it......long process but well worth it.
We took about an hour to fry around 60 papdis and there we gone in seconds when we served it.

For the Papdi Chaat you need

Papdis,Mint chutney,Tamrind Chutney,Store bought Sev,1 cup Potato Masala ,1 cup onions,1/2 cup tomatoes,1/4 cup grated carrots,1/4 cup yogurt,2 tbsp lime juice

Papdi
2 cup wheat flour,Cumin seeds,chilli powder,turmeric powder,ajwain,ghee and salt.
Method
Mix all the above ingredients with water and mix well to make a dough.Roll out into a thin, big roti and cut with a cookie cutter to make round discsFry in hot oil.

Potato Masala 5 Boiled and mashed potatoes, chilli powder ,cumin powder, turmeric, chaat powder, salt, finely chopped onions,tomatoes,green chillies.
Method
Mix the above ingredients together


Mint Chutney

1 bunch mint leaves ,1/2 bunch corriander leaves ,5 chillies ,5 peppercorns ,black salt and cumin seeds
Method Grind all the above ingredients with a little water. I make an extremely simple tamarind Chutney


Tamarind Chutney 1/2 cup tamarind 1/2 cup jaggery water
Method Boil the above ingredients and grind well so that there are no chunks.

To Assemble the Papdi Chat. On the papdi put some of the potato masala followed by 1 spoon of mint and tamarind chutney, yogurt and top it off with some
finely chopped onions,tomatoes ,grated carrot and lime juice and sev.

LO @ Kolle Panipuri. kole places are the one who make the best snacks! I remember one tasty Bhelpuri I used to eat from a bus stand shack around Shivaji nagar! :D

Sometimes those little "hole in the wall" places have the best food, that is why they are still around:D
