Spring rolls for Spring

As I sat wondering what I should cook to enter Food for Plastic Challenge II - a taste of spring (or fall), I thought whats better than Spring Rolls to welcome the beautiful Spring.

In India Spring is the first season of the year and is called Vasanth Ritu.Ugadi marks the beginning of the South Indian New Year which is the most important festival for Hindus.
Ugadi heralds the beginning of the New Year, new month and new day.
It also marks a beginning of new life as plants acquire new life, shoots and leaves.We can see budding tender leaves, flowers and fruits; listen to the chirping of birds and smell fragrance of flowers from a distance.

Houses are cleaned for the festival. People wake up before the break of dawn, apply coconut oil on their skin and bathe after which they decorate the entrance of their houses with fresh mango leaves.
Wearing new clothes, they offer Pooja for the God, invoking his blessings before they start off with the New Year. They pray for their health, wealth and prosperity and success in business too. Ugadi is the most auspicious time to start new ventures.
People consume Bevu (neem) and Bella (jaggery). The neem, though tastes bitter for the tongue, it is good for health. Jaggery which is sweet increases haemoglobin in blood and provides additional energy for the body. The inner significance of this is to indicate that life is a mixture of good and bad, joys and sorrows, success and disappointment, and all of them have to be treated alike.

To make the Spring rolls you need.

Spring/Egg roll wraps
5 Tbsp cooked corn
1/4 cup cooked noodles
I cup chopped mixed spring vegetables (I used peas,beans,garlic,beans,onions,scallions cabbage,lettuce,broccoli,spinach,Bell Peppers)
salt

2 Tbsp Lemon juice/Vinegar
2 Tbsp Chilli Sauce
2 Tbsp Soy sauce
2 Tbsp Butter

Method

1.Mix all the above mentioned ingredients (except the spring roll wraps and butter)
2.Pre heat oven to 350 degree F

3.Place filling in center of the wrap,fold the sides and roll snugly,use butter as glue to seal the side.

4.Paint the rolls with melted butter.
5.Bake in center of the oven for 20 minutes or till crisp and golden brown.

Alternatively you can deep fry the rolls.
